Step 1: Sprinkle a little salt on your chopping board before chopping garlic. This stops the board absorbing garlic flavours.
Step 3: Marinate meat in a glass or ceramic bowl. Acids in a marinade, such as lime juice, can react with a metal bowl and taint the flavours of the food.
