Add that extra oomph to your chicken with this simple marinade.

Step 1: Sprinkle a little salt on your chopping board before chopping garlic. This stops the board absorbing garlic flavours.

 





Step 2: The pith can be bitter, so use a small sharp knife to remove it from the lime rind.

 






Step 3: Marinate meat in a glass or ceramic bowl. Acids in a marinade, such as lime juice, can react with a metal bowl and taint the flavours of the food.
