1/2 cup flaked almonds
75g white chocolate, melted, to decorate

Basic biscuit mix

185g butter, softened
3/4 cup caster sugar
1 teaspoon vanilla extract
1 egg
2 cups Lighthouse Cake, Biscuit and Pastry plain flour

Method

Step 1 Preheat oven to 180°C/160°C fan-forced. Line 3 baking trays with baking paper.

Step 2  Make basic biscuit mix: Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat until combined. Sift flour over butter mixture. Using a wooden spoon, stir to combine (see notes for baking instructions and tips).

Step 3 Roll biscuit dough out between 2 sheets of baking paper until 4mm thick. Using a small knife, cut dough into 6cm x 3cm rectangles. Place on prepared trays. Re-roll remaining dough and repeat. Sprinkle almonds over rectangles. Press to secure.

Step 4 Bake for 8 minutes or until light golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool. Drizzle with chocolate. Set aside for 5 minutes to set. Serve.

125g butter, chopped
2/3 cup golden syrup
2/3 cup dark brown sugar
2/3 cup milk
1/2 teaspoon bicarbonate of soda
1 egg, lightly beaten
1 2/3 cups plain flour, sifted
1 tablespoon ground ginger
1 teaspoon mixed spice
Lemon zest, to serve

Lemon icing

2 cups icing sugar mixture, sifted
2 tablespoons lemon juice
2 teaspoons boiling water

Method

Step 1 Preheat oven to 180°C/160°C fan-forced. Grease an 8-hole, 3/4 cup-capacity mini loaf pan.

Step 2 Place butter, golden syrup, sugar and milk in a saucepan over medium heat. Cook, stirring, for 4 to 5 minutes or until butter has melted and sugar dissolved (do not boil). Remove from heat. Add bicarbonate of soda. Stir to combine. Set aside to cool for 10 minutes.

Step 3 Add egg. Whisk to combine. Add flour, ginger and mixed spice. Whisk until smooth. Spoon mixture into pan holes until half-full.

Step 4 Bake for 25 minutes or until a skewer inserted in centre of 1 cake comes out clean. Cool in pan for 5 minutes. Turn out onto a wire rack to cool completely.

Step 5 Make icing Place icing sugar, lemon juice and boiling water in a bowl. Stir until smooth. Spoon over cakes. Stand for 5 minutes or until icing starts to set. Top with zest. Set aside until set. Serve.

The name means "little bracelets" and for many Italians, particularly Sicilians, it simply wouldn’t be Christmas without these semicircular fig-filled biscuits.

Makes 21 | Skill level Mid

Ingredients

500 g dried figs, stems removed, chopped
150 g dried pitted dates, chopped
200 g (1⅓ cups) raisins, chopped
1 tsp orange zest
1 tsp lemon zest
60 ml (¼ cup) orange juice
90 g (¼ cup) honey
100 g (1 cup) walnuts, toasted
80 g (½ cup) blanched almonds, toasted
1 tsp ground cinnamon
1 tsp ground nutmeg
525 g (3½ cups) plain flour
120 g (¾ cup) icing sugar
150 g cold unsalted butter, chopped
1 egg, plus extra 3 egg yolks
hundred and thousands, to decorate

Royal icing
1 egg white
240 g (1½ cups) icing sugar mixture

Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
 

Instructions

For ease, you can use store-bought royal icing.

Process figs, dates, raisins, orange and lemon zest, juice and honey in a food processor until finely chopped. Transfer to a bowl. Process nuts in food processor until finely chopped. Add to fruit mixture with cinnamon and nutmeg, and stir to combine.

Process flour, icing sugar and butter in a food processor until mixture resembles fine breadcrumbs. Add 1 egg, extra 2 egg yolks and 2 tbsp water, and pulse until mixture forms a dough. Shape into 7 discs, wrap each in plastic wrap and refrigerate for 30 minutes, to rest.

Preheat oven to 180°C. Working with 1 disc at a time, roll out dough to a 21 cm x 10 cm rectangle. Trim edges. Place ½ cup of the fruit mixture in the centre of the pastry along longest edge. Fold over bottom edge to cover mixture, then roll up to form a log. Repeat with remaining pastry and fruit mixture.

Using a floured knife, cut each fruit-filled log into 3 x 7 cm-long pieces. Cut 4 x 5 mm-wide slits three quarters of the way through biscuits. Shape biscuits gently to fan out slits.

Place on 2 greased and lined oven trays. Brush with remaining lightly whisked egg yolk. Bake for 20 minutes or until light golden. Transfer to a wire rack to cool.

To make icing, whisk egg white and icing sugar in a bowl until combined. Immediately drizzle biscuits with icing and scatter with hundreds and thousands, to decorate.

455 g suet (shortening)
1 tsp salt
4 tsp baking powder
4 eggs
455 g raw sugar

2 tsp vanilla
2 cups milk
2 cups water
2 tbsp flour

Instructions

Mix flour, fruit, suet, salt and baking powder.

In another bowl, beat eggs and raw sugar, then add golden syrup and vanilla to eggs. Mix egg mixture into dry ingredients, adding milk and water at the same time, mix well.

Scald a 60cm square of unbleached calico and dust with 2 tablespoons of flour. Put mixture into it and tie with room to swell. Boil — fully immersed in water — for 6–7 hours, adding boiling water as it steams away.

1/2 tsp ground nutmeg

50g glace cherries
450g brown sugar
200g fresh breadcrumbs
1 apple, peeled, cored, grated
50g ground almonds
300g butter, melted
Juice of 1 orange
5 large eggs, beaten
1/2 tsp almond essence
1/2 tsp vanilla essence

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

Instructions

Sift together the flour, mixed spice and ground nutmeg.

In a large bowl, combine the sultanas, raisins, currants, mixed peel, glace cherries, brown sugar, breadcrumbs, apple, ground almonds and the flour-spice mixture.

Add the melted butter and orange juice to the dry ingredients. Add the eggs, and the almond and vanilla essences. Mix roughly with hands, making sure all dry ingredients are wet.

Transfer the mixture into greased pudding basins (you may require 2 basins). Cover the top  with greaseproof paper and kitchen foil. Stand in a large saucepan of boiling water (water 1/2 way up the side of the pudding basin) and simmer for 7-8 hours, topping up the water in the saucepan as required.

When cooked, replace the greaseproof paper and kitchen foil.

To serve, steam again for approx 1.5 hours (same method as for cooking). Serve with brandy sauce, brandy butter or chilled vanilla cream or ice-cream.

Ingredients

1 Cup of cracked wheat (bulgur)
1/2 Kg ground meat (beef or lamb)
1 Grated onion
1/2 teaspoon Black pepper
1 teaspoon Salt
1 teaspoon Allspice or kibbee spices
1/4 Ice cold water or crushed ice


For filling
1/4 Kg ground meat (beef or lamb)
1/2 Onion, diced
1/4 cup toasted pine nuts
1/2 teaspoon Allspice or kibbee spices
1 Tablespoon vegetable oil
salt and pepper to taste
oil for frying

Method

- Wash the cracked wheat very well. Let drain and squeeze out the excess water.
- Take the cracked wheat and place it on a tray to dry for about 2 hours.
- Grate the onion, mix it with the cracked wheat and add the meat. Mix them together until well combined.
- Add your seasonings. Salt, pepper, and allspice. Mix once again very well.
 

TIP: You can mix these ingredients in a food processor so that they become better combined.

Preparation for the filling
 

- Heat up the oil, then add your diced onion, cook until golden in color. -Add the meat to the onions and cook until the meat is done.
- Add your salt, pepper and allspice. -Drain any excess fat from the filling. -Add the toasted pine nuts.


Making Kibee Balls
 

- Soak your hands in cold water. Take a small piece of dough. -Push with your index finger into the center of the ball making an indentation or place for the filling to go.
- The hole should be long in length in order to fill the dough ball. -Once this is done take a small amount of the filling and place it into the ball.
- Close the ball with your index finger and thumb. Repeat this step with every ball.
- Once all of them are made, you will heat up your frying oil and place each Kibbee Ball into the hot oil for frying.
- Once they are medium brown in color, take them out of the oil and place on a paper towel to soak up the excess oil.

Ingredients:

1 package Kataifi (shredded fillo dough)
3 sticks of sweet cream butter melted
1 15oz package of ricotta cheese
1 cup shredded mozerella
1/2 cup milk
3 tablespoons samolina or farina
1 cup Mediterranean simple syrup for serving
Ground pistachios for garnish

Preparation:


Preheat oven to 350 degrees. In a large bowl, crumble the kataifi with your hands and then add melted butter and mix completely. Put half of the mixture in the bottom of a non-stick pan and spread out as a crust. In a large bowl combine the ricotta cheese and mozerella cheese. In a small pan slightly heat the milk for 1 minute and add the samolina and cook for 30 seconds, then add the mixture to the cheese mixture and combine well. Pour cheese mixture in the pan on top of the kataifi crust and spread evenly. Place the rest of the kataifi mixture evenly on top of the cheese mixture to form another crust on top. Place pan in oven and cook at 350-400 degrees for 45 minutes or until golden brown. Take out and let stand for 30 minutes and then invert onto a nice plate and garnish with ground pistachio nuts. Serve with simple syrup.

Ingredients:

1 (17.5 ounce) package frozen puff pastry sheets, thawed
1/2 cup chopped walnuts
1 cup chopped pecans
1 cup chopped hazelnuts
1 cup raisins
1 cup flaked coconut
1 1/4 cups white sugar, divided
4 cups milk
1/2 cup heavy cream

Preparation:

1. Preheat oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish.
 

 2. Place the pastry sheets in the baking dish and place the dish in the oven. Watch it closely. When the top layer turns crunchy and golden, remove it from the oven. Continue until all the sheets are cooked.
 

3. Preheat the oven broiler.
 

4. In a bowl, combine walnuts, pecans, hazelnuts, raisins, coconut and 1/4 cup sugar. Break cooked pastry into pieces and stir into nut mixture. Spread mixture evenly in 9×13 inch dish.
 

5. Bring milk and 1/2 cup sugar to a boil in a medium saucepan over medium heat. Pour over nut mixture.
 

6. Beat the heavy cream with the remaining 1/2 cup sugar until stiff peaks form. Spread evenly over nut mixture in dish.
 

7. Place dessert under oven broiler until top is golden brown, about 10 minutes. Serve hot.

Ingredients

1 x 400g can chickpeas, drained and rinsed
juice of 1½ lemons
3 cloves garlic, peeled and roughly chopped
½tsp ground cumin
50g (2oz) walnuts
200ml (7fl oz) tahini
4-5tbsp extra virgin olive oil
large pinch salt

Place the chickpeas, lemon juice, garlic, cumin and walnuts into a food processor and blitz for a few seconds to break everything up. Add the tahini and olive oil and blend to a creamy texture – add water or more olive oil to reach the consistency you prefer. Season with salt.

Serve with warmed pitta bread.

Ingredients

1kg (2lb) boneless lamb shoulder
2 tsp tagine paste
1 tsp Moroccan spice blend, such as ras el hanout
2 tbsp extra-virgin olive oil
1 tbsp red wine vinegar
½ x 30g pack mint, leaves only
25g (1oz) flaked toasted almonds
½ x 30g pack fresh coriander, leaves only
seeds from ½ pomegranate

Preparation

Preheat the oven to gas 7, 220ºC, fan 200ºC. Unroll the lamb and spread the tagine paste in the middle, then re-roll. Coat in the Moroccan spices and put into a roasting tin. Roast in the oven for 30 minutes, then cover the lamb with foil, reduce the temperature to gas 2, 150ºC, fan 130ºC and cook for 2½-3 hours.

Remove the lamb from the oven and leave to rest for 15 minutes. Put on a board and, using two forks, flake or shred the meat, discarding any fat. Arrange on a platter.

Mix 2 tablespoons of meat juice with the oil and red wine vinegar and drizzle over the lamb. Scatter over the mint, almonds, coriander and pomegranate seeds and serve immediately.

How to cook a turkey

Is it your turn to cook Christmas lunch for family and friends this year? Well, there's no need to panic! By following our simple tips and techniques you'll discover how easy it is to cook and serve a mouth-watering roast turkey.

What you need

For perfectly prepared turkey, have the following equipment on hand before you start:

  • pastry brushes for brushing the turkey with butter
  • unwaxed white kitchen string for trussing the turkey
  • non-stick baking paper and foil for covering the turkey
  • a large roasting pan for cooking the turkey
  • a wire rack to be placed inside the roasting pan. The turkey sits on this rack during cooking
  • a skewer to test when the turkey is ready
  • a carving knife and fork for when you're ready to carve.

Turkey basics

Frozen whole turkeys are available from supermarkets all year round, starting from around 2.5kg (size 25), which is enough to feed up to six people (see Guide to turkey weights). To get the most from your turkey, follow these tips.

Thaw frozen turkeys in the fridge - never on the kitchen bench. A large turkey can take more than three days to thaw. Once thawed, leave it in the fridge until ready to cook. Stuff the turkey just before cooking.


Turkey breast is very lean and the lack of fat means it can dry out during the long cooking process. Cooks traditionally covered the turkey with a piece of muslin soaked in melted butter to keep it moist, but it's easier to use non-stick baking paper and foil. Covering the breast with strips of bacon or prosciutto also helps to keep the moisture in and adds extra flavour. It's also important to baste the turkey with melted butter or pan juices to prevent it drying out during roasting.


The sheer size of a turkey means that it can take up the whole of a standard domestic oven, leaving no room for roasting the vegies you plan to serve with it. If this is the case, cook your vegetables, separately, first. Once done, cover them with foil and set aside while you cook the turkey. Then, while the turkey is resting, return the oven shelves to their original positions and increase the temperature. Uncover the vegetables and return to the oven until heated through.


To store leftover turkey, allow it to cool slightly. Remove all of the meat from the carcass and store in an airtight container in the fridge for up to one week. You can also use the carcass to make stock. To freeze leftover turkey meat, wrap in plastic wrap and place in an airtight container. Label, date and freeze for up to a month. Thaw in the fridge overnight.

Turkey cooking tips

Step 1: Preheat oven to 180°C. Place an oven shelf in the lowest position so the turkey will be in the centre of the oven. Remove the other shelves.

Step 2: Add a little water to a roasting pan (this will help keep the turkey moist).

Step 3: Place the turkey, breast-side up, on a wire rack in the pan. Brush with melted butter then cover with non-stick baking paper. Finally, cover the pan with foil to seal. Cook according to recipe.

Ingredients

1 quantity honey and cinnamon biscuit dough (see related recipe)
1/3 quantity glace icing (see related recipe)
silver cachous, to decorate

Method

Using a 6.5cm bell cutter, cut out biscuits. Place on prepared trays. Bake, swapping trays halfway during cooking, for 10 to 12 minutes or until crisp and golden. Cool on tray for 5 minutes before transferring to a wire rack to cool completely. Repeat with remaining dough.

Place icing in a piping bag fitted with a 2mm nozzle. Pipe small linked dots around edge of biscuits. Decorate joins between dots with cachous. Set aside for 1 hour to set. Serve or gift wrap.

Notes

This recipe requires 1 hour cooling and setting time. Variations You can make holes in the tops of the dough with a wooden skewer before cooking so that you can thread through ribbon and turn the bells into Christmas decorations. To change the colour of the icing, add a drop of food colouring.

Ingredients

2 tbs butter, at room temperature
6 tsp olive oil
1 2kg beef scotch fillet (rib eye) roast
Salt & freshly ground black pepper
1.5kg (about 10) sebago (brushed) potatoes, peeled, halved lengthways, patted dry with paper towel
2 bunches Dutch (baby) carrots, trimmed to 1cm, washed, scrubbed, patted dry with paper towel
1 tbs plain flour
375ml (1 1/2 cups) beef stock
Steamed spinach or green beans, to serve

Method

When purchasing beef to roast, look for a fairly even-sized piece. You want a piece that has a little bit of marbling throughout and fat on the top. The marbling will help keep the beef moist and tender during cooking while a thin layer of fat on top will help protect the beef from drying out. There are plenty of beef cuts which are suitable to roast (see right). Preheat oven to 220°C. Heat 2 tsp of the butter and 2 tsp oil in a large shallow flameproof roasting pan over high heat. Cook the roast, turning occasionally, for 5 minutes or until well browned. (If you don't have a flameproof roasting pan, you can use a frying pan to brown the beef and then transfer to a roasting pan.)

Remove roasting pan from heat and season beef all over with salt and pepper. (The beef is seasoned after browning because salting may draw the moisture out of the beef, making it tough.) Place the potatoes, 3 tsp of the remaining butter and 1 tsp of the remaining oil in a bowl. Use your hands to rub the butter and oil evenly over the potatoes. Season with salt and pepper. Arrange the potatoes in a single layer around the beef.

Cook beef and potatoes in preheated oven, basting beef with the pan juices once during cooking to keep it moist, for 30 minutes.

Place remaining oil and butter in another roasting pan. Place in oven for 5 minutes or until butter melts. Add carrots and toss to coat well. Turn potatoes and baste beef. Add carrots to oven and cook, shaking pan occasionally, for 25 minutes until beef is medium or until cooked to your liking.

Transfer beef to a carving tray and cover loosely with foil. Set aside for 15 minutes to rest. It is important to rest before serving as it allows juices and heat to redistribute. While beef is resting, transfer potatoes to a tray lined with baking paper. Increase oven temperature to 250°C. Return potatoes to oven and continue to cook while beef is resting. To make gravy, strain pan juices from the roasting pan into a heatproof jug. Return 2 tbs of pan juices to the roasting pan (alternatively, if you don?t have a flameproof roasting pan, transfer to a saucepan) and heat over high heat. Add the flour and cook, stirring, for 1 minute or until mixture bubbles.

Gradually add the stock and cook, scraping the pan with a flat-bottomed wooden spoon to dislodge any bits cooked onto the base of the pan. Boil, uncovered, stirring occasionally, for 8-10 minutes or until the gravy reduces and thickens slightly. Strain gravy into a warmed serving jug.

Carve the beef across the grain and serve with the gravy, roast potatoes, roast carrots and steamed spinach or beans.

Notes

Other beef cuts suitable to roast: Eye fillet and butt fillet: Brown beef in a little olive oil in a flameproof roasting pan (or in a frying pan and transfer to a roasting pan once sealed) over medium-high heat, turning occasionally, for 5-8 minutes or until well sealed. Roast in an oven preheated to 220°C following cooking times below. Set aside, covered loosely with foil, for 10-15 minutes before carving. Per 500g: Rare - 10-15 mins Medium - 15-20 mins Well-done - 25-30 mins Bolar blade, rump, sirloin, standing rib roast, silverside, topside and round: Cook in an oven preheated to 220°C for 15 minutes and then reduce temperature to 180°C and follow cooking times below. Set aside, covered loosely with foil, for 10-15 minutes before carving. Per 500g: Rare - 10-15 mins Medium - 15-20 mins Well-done - 20-25 mins To use these cuts in the basic recipe, reduce the butter tossed with the potatoes in step 2 to 1 tsp. Add the potatoes to roasting pan after reducing the oven temperature to 180°C. Add the carrots and roast for 40 minutes. Continue basic recipe from basting the beef in step 2. gravy variations: orange & mustard gravy: Replace half the stock with freshly squeezed orange juice. Add 1 tbs wholegrain mustard with the orange juice and stock in step 3. Stir in 1 tsp brown sugar just before serving. peppercorn gravy: In step 3, replace the flour with 1 tbs crushed black peppercorns. Cook in the roasting pan over medium heat, stirring, for 1 minute. Reduce the stock to 185ml (3/4 cup). Add 185ml (3/4 cup) thin cream to the pan with the stock. red wine & mushroom gravy: Add 150g sliced mixed mushrooms (like Swiss brown, oyster and shiitake) to the roasting pan in step 3 before adding the flour. Cook, uncovered, over high heat, stirring often, for 5 minutes or until soft. Replace half the stock with dry red wine. red wine & rosemary gravy: Add 1 crushed garlic clove and 1 tbs chopped fresh rosemary leaves to the roasting pan in step 3 before adding the flour. Cook, stirring, for 1 minute. Replace half the stock with dry red wine.

120g (2 cup) fresh breadcrumbs

1 x 170g pkt craisins (dried cranberries)
1 x 80g pkt pistachio kernels, coarsely chopped
1/2 cup chopped fresh continental parsley
1 tbs finely grated lemon rind
2 eggs
6kg (size 60) fresh or thawed turkey, neck removed
12 (about 120g) thick slices prosciutto
12 sprigs fresh thyme

White wine gravy

50g (1/3 cup) plain flour
500ml (2 cups) chicken stock
250ml (1 cup) white wine

Method


Preheat oven to 180°C. Place shelf in the lowest position. Combine the breadcrumbs, craisins, pistachio, parsley and lemon rind in a bowl. Add the eggs and stir until combined.

Remove excess fat and giblets from the turkey. Wipe inside and out with paper towel. Fill cavity with the breadcrumb mixture. Tie legs together with unwaxed white kitchen string. Tuck wings under. Add a small amount of water to a large roasting pan. Place turkey, breast-side up, on a wire rack in pan.

Arrange the prosciutto, overlapping slightly, over the turkey. Tuck the thyme sprigs underneath the prosciutto. Cover the turkey with non-stick baking paper, then cover the pan with foil. Roast in oven for 2 1/2 hours. Remove paper and foil.

Increase oven temperature to 200°C. Roast for 35-45 minutes or until prosciutto is crisp and the juices run clear when the turkey's thigh is pierced with a skewer. Transfer turkey to a plate and cover with foil. Set aside for 15 minutes to rest.

Meanwhile, to make the white wine gravy, discard the liquid from the roasting pan. Place pan over medium-high heat. Add the flour and cook, stirring, for 1 minute or until the mixture bubbles. Add the stock and wine and cook, scraping the pan with a flat-edged wooden spoon to dislodge any bits that have cooked onto the base, for 8-10 minutes or until the gravy thickens.

Transfer the turkey to a serving platter and serve with white wine gravy.

500g carton vanilla custard
300ml pure double thick cream
1 teaspoon vanilla essence
450g packet Madeira cake, ends removed, roughly broken into 3cm cubes
2 bananas, peeled, sliced
50g slivered almonds, toasted

Butterscotch sauce

150g butter, cubed
3/4 cup brown sugar
300ml thickened cream

Method


Make butterscotch sauce: Place butter, sugar and cream into a saucepan over low heat. Stir until butter has melted. Simmer gently for 5 minutes without stirring. Remove from heat. Allow to cool for 20 minutes or until thickened.

Place custard, cream and vanilla into a bowl. Mix to combine. Cover and refrigerate for 2 hours or until cold.

Pour half the butterscotch sauce into a 10-cup capacity serving bowl. Top with cake cubes, pressing down gently. Pour remaining sauce over cake.

Arrange sliced bananas evenly over butterscotch sauce. Spoon custard mixture over bananas. Sprinkle with almonds. Cover. Refrigerate for 6 hours or overnight, if time permits. Spoon into serving glasses or bowls. Serve.

2 x 300g pkts Home Brand Chocolate Sponge Roll, cut into 3cm pieces
60ml (1/4 cup) cherry brandy or kirsch
600g bought chocolate custard
1kg cherries, stems removed, pitted
45g (1/4 cup) dry-roasted hazelnuts, coarsely chopped

Method


Use an electric beater to beat the cream in a bowl until soft peaks form.

Arrange one-third of the sponge over the base of a 3L (12-cup) capacity serving dish. Drizzle over 1 tablespoon of cherry brandy or kirsch. Pour over one-third of the custard. Top with one-quarter of the cherries and one-third of the cream. Repeat to make 2 more layers. Cover and place in the fridge for 6 hours or overnight to chill.

Top with remaining cherries and sprinkle over the hazelnuts.

Ingredients

18 dried shiitake mushrooms
375ml (11/2 cups) boiling water
2 tbs barley miso paste
2L (8 cups) water
6 20 x 20cm nori sheets (toasted seaweed)
6 (about 180g each and 2cm thick) salmon fillets, skin removed
5cm piece fresh ginger, peeled, thinly sliced
3 garlic cloves, thinly sliced
60ml (1/4 cup) soy sauce
250g dried udon noodles
6 green shallots, trimmed, thinly diagonally sliced
Pinch of salt

Method

Place mushrooms in a heatproof bowl and pour over the boiling water. Set aside for 10 minutes or until mushrooms are soft. Drain, reserving the liquid. Thinly slice and set aside.

Meanwhile, place the miso paste in a small jug, add 1 cup of the water and stir until paste is diluted. Set aside. Place 1 sheet of nori on a clean flat surface. Place 1 piece of salmon on the edge of the nori sheet. Fold the nori sheet over the salmon and roll up tightly to form a parcel. Repeat with the remaining salmon and nori sheets.

Arrange salmon parcels, seam-side down, in a 25cm (base measurement) bamboo steamer basket. Add enough water to a medium wok to reach a depth of 5cm (about 3 cups) and bring to the boil over high heat. Reduce heat to medium-high and place steaming basket over the water. Cover tightly and steam for 4 1/2 minutes for medium or until cooked to your liking.

While salmon parcels are cooking, place reserved mushroom liquid, remaining water, ginger, garlic and soy sauce in saucepan. Bring to the boil over high heat. Add the noodles and cook, uncovered, stirring occasionally, for 5 minutes or until noodles soften. Remove from the heat and stir in sliced mushrooms, miso liquid and green shallots. Taste and season with salt.

To serve, slice each salmon parcel diagonally into 3 equal pieces. Use tongs to divide noodles among shallow serving bowls and ladle over the hot miso broth. Arrange salmon over the noodles and serve immediately.

Notes

You can carry out steps 1 and 2 up to 2 hours ahead. Place the salmon on a plate and cover with plastic wrap. Place in the fridge until required. Continue from step 3, 30 minutes before serving. Nori sheets and dried udon noodles are available from most supermarkets and Asian grocery stores.
